PIZZA EQUIPMENT TURNS UP THE HEAT ON STAND 1730

The hottest new item on the Pizza Equipment Ltd Hotelympia stand, number 1730, has to be the Moretti Forni Neapolis, an electric deck oven for Neapolitan pizzas that reaches an unprecedented temperature of 510°C, higher than any other pizza oven on the market.

The well-insulated oven chamber is made from refractory material and the biscuit cooking surface is 55mm thick. The maximum temperature of 510°C promises a constant cooking temperature of 485°C, ideal for producing the perfect Neapolitan pizza.

Being electric, the Neapolis is easy to keep clean while eliminating all the issues associated with a wood-burning oven such as mess from the fire, fumes, and storage for the logs. The oven is simple to install, without the need for gas safety checks or the added expense of gas appliance maintenance. It also has a more refined temperature control system than gas ovens, and can be programmed for uniform precision cooking, using digital controls.

With dimensions of 1084mm(w) x 1786mm(d) x 1986mm(h), and an internal cavity measuring 750mm(w) x 1125mm(d) x 180mm (h), the Neapolis oven can comfortably hold six 12” pizzas. Its stylish post-industrial design will stand out in the restaurant, while the body remains cool to the touch for ultimate safety. The oven is available with a prover or non-heated cabinet base.
