‘COMBI-PAN’ to feature on Charvet Hotelympia stand 4301

Charvet’s new Combi-Pan is making a show debut at Hotelympia 2016.

Available as a stand-alone unit, built into a bespoke suite or fitted within Charvet ONE, Pro 700, 800 or 900 suites, the Combi-Pan can be used for poaching, blanching, sealing and shallow frying.

Options include a meat resting grid and chopping board.

Says Wayne Cuomo, Charvet UK MD, “The Charvet Combi-Pan is designed to fit the demand for a truly multi-functional prime cooking unit which is built to Charvet’s legendary heavy duty specification.

“There is increasing pressure on manufacturers to come up with more innovative prime cooking equipment and the Combi-Pan offers several modes of cooking from a relatively small footprint. It is easy for cooks and chefs to operate and offers distributors a flexible, multipurpose prime cooking option that can adapt to changing menus and save space in their kitchen schemes.”

The pan has a divider so that you can separate foods if required. The two separate heating zones operate from 50-250°C and the Electrical rating is 7.5 kW / 3~400V+E.

Featuring a GN2/1 tank, the Pan is 77 mm deep with a 12mm thick base; all AISI 304 stainless steel. It comes with a water tap and has a large upstand and drain plug that discharges into a GN 1/1 drain housed in the base unit behind cupboard doors.

Channel 4’s new TV series featuring Michel Roux Jnr mentoring eight young people with varying disabilities, ranging from Tourette’s Syndrome to blindness was filmed at Bromley College’s Hospitality, Food and Enterprise Career College – based at its Orpington campus.

Kitted out with medium sized but heavy duty Charvet Pro700 cooking suites, the kitchens have no protruding oven flues or central service spines to obscure the view over the cooking area, helping lecturers keep an eye on students and also making camera work much easier for Channel 4!

CHARVET ADDS BRATT PAN, BOILING PAN AND ‘RISE & FALL’ OPTIONS TO PRO 700 SERIES

The Pro 700 Series launched in response to demand for high power, heavy-duty but compact equipment for use in restricted spaces and at the point of service such as open kitchens.

Now Charvet has added a Rise & Fall option, which allows a suite of modular Pro 700 cooking units such as plancha, induction hob, fryer, solid top and gas burners to be raised or lowered at the touch of a button, allowing flexible access to suit tall or short chefs or those with disabilities.

Providing increased bulk cooking capacity, new 100L Boiling Pans and 60L Bratt Pans are also available. The suite pictured will be on display at the Restaurant Show.
