LT1 Tilda Chef of the Year

60 minute competition.

Wednesday 2nd March, 1120hrs-1220hrs

One hour will be allowed to prepare, cook and present two portions of a main course dish, and two portions of a dessert, using rice in both dishes, from any of the following Tilda range: Easy Cook Basmati, Brown Basmati, Fragrant Jasmine, Arborio Risotto, Original Pure Basmati, Basmati & Wild. The entries for this competition should reflect and celebrate World Cuisine in the main course recipe and the base ingredient for the chosen dessert must also be rice. A brief description of the chosen dishes listing the Tilda products must be forwarded with each entry. Rice products will be provided by the sponsor, Tilda. Competitors to supply all other ingredients. This year’s prize is a fantastic two-day culinary trip to Italy, to discover first-hand the journey of Tilda’s renowned Arborio risotto rice and its unrivalled cooking qualities and place in Italian cuisine. Medals, framed certificates and commemorative plate will also be awarded.

 

Additional Information for this class

The judges in this competition will be primarily looking at the inclusion and cooking of the Tilda rice in both the main course and dessert dishes.You may choose any of the rice products listed above and may use the same variety for both main and dessert. Finalists will be chosen from the written entry so it is advisable to include photographs of your dishes when appyling. All ingredients and service equipment except rice need to be supplied by the competitor. A written menu card needs to be displayed at the final.

Arrival Time

Minimum one hour before competition1020hrs, halls will be open from 0730hrs. Please report to Live Theatre registration when you arrive.

Equipment Provided

Workstations comprise a 6 ring burner, oven and grill, electricIty points, plumbed in sinks and hand wash basins. There is also access to refrigeration and a freezer.

Hygiene Products

Disposables

Cleaning chemicals such as sanitisers, degreasers and washing up liquid will be provided by Ecolab.

Cling Film, Foil and Baking Paper will be provded by Wrapex.

Ingredients Provided

Rice products used in your menu will be provided by Tilda (your entry must specify which rice you will be using). All other ingredients to be provided by the competitor.

What are judges looking for?

Judges will be tasting carefully the dishes, considering the criteria of world food when marking and presentation.

Feedback

Judges will be available at the Live Theatre for feedback after the judging has been completed, all competitors should make time to do this.

Results

Results will be announced by the Compere and posted on the results board as soon as possible after judging is complete.

Presentation of awards –

Sponsors Lounge (close to Live Theatre) 1400hrs – 1600hrs. Tilda will host their own reception for competitors to attend. Awards will be presented here.

Entry into the show

All competitors and colleagues must register online as a Salon Culinaire Competitor at www.hotelympia.com/salon passes will be emailed direct.

Arriving at the show and accessing the hall

Hotelympia is in the South Hall at ExCeL at the East end of the venue. The closest entrance from the Central Boulevard is S7, turn right as you enter the show, Live Theatre is located at the end of the hall. If you need drop-off faclilities then please proceed to the Lorry Marshalling Yard and go to the Traffic Administration Office. On production of your Salon Culinaire Vehicle Pass (which will be sent to you) you will be directed to the lorryway to gain access to Vehicle Door S10, which is closest to Live Theatre for unloading. There is no faciity to park on the Lorryway, once you have finshed unloading you must immediately remove your vehicle and proceed to the Undercroft Car Park.

Please note if you do not require unloading facilities, for easier and quicker access, please park in the Undercroft Car Park and proceed with light Equipment to Live Theatre Registration.
